    I love vanilla especially in a vanilla bean cheesecake. Yum! My son doesn’t like chocolate so we have had to embrace vanilla even more — not that I am complaining!

    everything starts with good vanilla extract. I just got my supply of wonderful beans in the mail and I am starting to make my vanilla extract for holiday gifts!

    I literally put vanilla in everything I bake – but my favorite would have to be a basic vanilla sponge cake made with vanilla beans/vanilla bean paste, light and fluffy like a vanilla pillow. Nothing beats simplicity.

    I add it to pretty much anything sweet. Some of my favorite things to use it in are smoothies, hot spiced cider, and hot chocolate (yes I like some vanilla with my chocolate!).

    I make Apricot Vanilla preserves. One year we harvested 50 pounds of apricots from our trees. In an effort to use that glut of delicate, fully ripe fruit before it went bad, I made multiple batches of jam. Some of it didn’t set up well and I thought it was going to go to waste. But…then we discovered it makes the finest waffle topping in all the land! Our life has never been forever changed by that jam.

    Love anything vanilla! My persanal preference is Mexican vanilla, dark or clear! And if using vanilla beans love to put them in my sugar!

    I love putting the vanilla bean in my sugar for that extra flavor. But the best is Cocoa Vanilla Scallops…Sea scallops dusted with cocoa and pan seared. finished with a buttery vanilla sauce.. Yup, it’s a plate licker!

    Nowadays, I enjoy it most in ice cream, but when I was little, I used to make myself something called “Vanilla Milk”: basically add a few drops of vanilla extract to one glass of milk. It was pretty darn good, as I recall. :)

    I love vanilla. I actually add a bit more than is called for in my recipes especially my zucchini bread. It just brings out the flavor of the food and adds a special something to the taste of the food baking or cooking.

    I love vanilla so much that on many recipes I double the amount called for. I LOVE vanilla cream pie and really good vanilla bean ice cream.

    Of course, vanilla is great in baked foods, but have you ever tried just a little bit in a bowl of oatmeal or cream of wheat? It’s brings it to a whole new level!

    My favorite way to enjoy vanilla is in a nice creamy pudding or custard…and it has to be from the bean so I can have the little black flecks peppered throughout.

    I’m a faithful, fanatical, vanilla girl…. ! I choose vanilla over ANYTHING chocolate… (sorry chocolate lover)!

      …p.s. I just tried making the cajeta for a bridal shower; and it came out delicious! I put them in 4 oz glass canning jars and gave them out as “thank you” shower gifts. ♥
